Otro Lado, Segundo Heona
Segundo Heona owns and operates a little farm called Otro lado, located in La Florida. He grows Caturra and Castillo varieties, and oversees a team of collectors who pick the ripest cherry for processing. At Otro Lado, cherry is washed and ferments in tanks for 15 to 20 hours. After the pulp has been removed, coffee is dried to a water content of about 10%, then fully dried on the patio of his farm.
