This coffee was brought to us by a small group of coffee producers from the north of Nicaragua, in the departments of Nueva Segovia and Matagalpa. The coffee is picked at peak ripeness, fermented for 15-20 hours, washed and then delivered to the mill, Beneficio La Estrella, where it’s carefully dried on shaded raised beds. This is the second year that Sightglass has worked with these producers, and we’re looking forward to a long collaboration.
